Pasta by Hand: Shapes & Sauces

Mix, rest and read fresh dough before shaping cavatelli, farfalle and long ribbons for two quick seasonal sauces.

What you will take home

  • Judge hydration by feel and correct a dough before kneading
  • Shape three forms with a board, knife and ordinary table tools
  • Sequence sauce and pasta so both reach the table at their best

Mara teaches dough through touch and timing, turning a few repeatable motions into shapes that home cooks can confidently make again.

Experience needed

No previous pasta experience is required. Expect to stand and work with your hands for most of the class.

Each pair shares a wide preparation bench; a seated, height-adjustable station can be prepared with advance notice.

The Copper Room is through the courtyard entrance. Please arrive 15 minutes before the published start time.

Step-free entry, an accessible washroom and a height-adjustable preparation table are available. Tell the studio which setup you need before the class.
